Best Recipes with Lots of Restrictions?

Hi. I just went on a diet where I can't eat any grains (and yes, quinoa, millet, etc... are grains). I have been basically living on salads, and I am tired of them. I want some new recipes that I could try and make that adhere to all my restrictions. My restrictions are: No grains (not even healthy ones like oatmeal, rye, rice, quinoa, wheat, sesame, hemp, barley, kamut, polish wheat, egyptian wheat, buckwheat, sorghum, millet, amaranth, tapioca, potato, and bran), no starches (i.e. potato, tapioca, etc...), no dairy, no soy (which pretty much rules out all dairy substitutes as well), no xanthan gum (or any other corn products), no meat, and no sugars (includes hidden and artificial sugars, honey, and maple syrup. The only sugar substitute I am allowed to use is Stevia). Basically, I can eat veggies, beans, nuts, fruits, squash, and coconut. I especially want some bread recipes or something of the sort. Please help me find some food that tastes good but is healthy.
